Ingredients:

Dates (preferably Medjool dates)

Boiling hot water

Steps:

Slit your dates to separate the skin from the seeds. Chop the skin into several pieces.

Soak the dates in boiling hot water for at least 1 hour.

Some recipes recommend soaking for 2 hours.

After soaking, transfer the date mixture to a blender and add another cup of boiling hot water.

You can also use a masher to mash the dates directly in the soaking bowl.

Blend the date mixture until smooth.

Strain the mixture using a cheesecloth or nut milk bag to separate the pulp from the liquid.

In a saucepan, bring the strained date juice to a boil and then reduce the heat, cooking it on low.

Simmer the date juice until it thickens and reaches a syrupy consistency.

Let the date syrup cool before transferring it to a jar or bottle for storage. It can be stored in the refrigerator for several months or in the freezer for up to a year.

Once you have made your date syrup, you can use it as a natural sweetener in various recipes, including pancakes, desserts, and smoothies.

Date syrup is a healthy alternative to refined sugars, as it contains nutrients and antioxidants.
