How to prepare agidi jollof from the comfort of your home
Agidi Jollof is a popular Nigerian dish made with corn starch/flour or Akamu (pap) and tomato stew. Here are the steps to prepare Agidi Jollof:
In a pot, pour the meat, onion, seasoning cubes, and boil for 15 minutes. Set aside.
Wash your corn and boil for 6 minutes, then drain the water. Your is ready to be grinded, ensure it blends smoothly.
Mix the corn starch/flour or Akamu with water to form a smooth paste.
Cook tomato stew with chopped onions, pepper, and seasoning cubes as you would cook stew.
Add the corn starch/flour or Akamu paste to the tomato stew and stir continuously until it thickens.
Add the boiled meat to the stew and stir.
Pour the corn mixture into the stew and stir until well combined.
Set aside another pot with water. Wrap the corn mixture in banana leaves, place inside the pot set aside.
Cover the pot and cook on low heat for 10-15 minutes, check occasionally to prevent burning.
Serve hot with your preferred side dish.
Note: The quantity of corn starch/flour or Akamu used depends on the desired consistency of the Agidi Jollof.
