How to prepare Ekpang Nkwukwo
Ekpang Nkwukwo is a native porridge from Nigeria, made with cocoyam and leafy green vegetables. Here is how to prepare Ekpang Nkwukwo:
Ingredients:
pounds cocoyam, bunch leafy greens (cocoyam leaves, collard greens, spinach, romaine lettuce), pound boiled meat, dried fish or protein, salt, maggi, dried pepper and crayfish.
Cooking Instructions:
Boil the dried fish or protein and set aside.
Peel the cocoyam and water yam, then grate them together.
Add salt, 2 Knorr cubes, some of the dried pepper, and crayfish to the grated cocoyam and water yam mixture.
Mix the grated cocoyam and water yam mixture with your hands until it forms a smooth paste.
Wash and cut the leafy greens into small pieces.
Add the boiled meat and dried fish or protein to the grated cocoyam and water yam mixture.
Add the cut leafy greens to the mixture and mix well.
Wrap the mixture in cocoyam leaves or aluminum foil.
Place the wrapped mixture in a pot of boiling water and cook for about 1 hour or until the leaves turn dark brown.
Serve hot.
